AN AMAZING SUMMER PASTA SALAD

We are officially celebrating as though it’s already summer – the weather has been amazing, the pool is open and get togethers and barbeques have commenced! I love to bring a pasta salad as a side – it’s easy to put together and it’s something everyone loves. This chopped Italian pasta salad is a new favorite that always has everyone asking me for the recipe! I’ve found that it tastes best when you make it the day before you’re going to serve it for all the flavors to sink in. I love it with grilled chicken, but it’s so good, I’m usually eating leftovers straight out of the bowl!

The Naughty Fork Chopped Italian Pasta Salad

Chop an English cucumber, black olives, banana peppers, red onion, cherry tomatoes, salami (I like uncured sopressata), mozzarella, green pepper and garnish with fresh basil on top.

Dressing:

3/4 cup olive oil

1/4 cup red wine vinegar

1 tsp garlic powder

1 tsp oregano

1 tsp dried basil

1 tsp onion powder

1/2 tsp salt

fresh ground pepper

1 tsp lemon juice

1 tsp dijon mustard

Pour over and mix well. Enjoy!
