A SIMPLE BUT AMAZING CHOCOLATE CHIP CAKE RECIPE

The holidays are right around the corner and it’s never a bad idea to have a quick and easy dessert recipe up your sleeve to bring along to dinner, get togethers or even cocktails with friends and family. This recipe is a favorite that my mom always whipped up super quickly and would bring along to all of the above and it’s become a favorite in our family, too! My daughter has been really flexing her cooking and baking skills and so when she wanted to make a sweet treat this past weekend for an elderly couple who recently moved to the neighborhood, I knew this would be the perfect one for her to try. It’s moist and sweet and actually tastes even better the day after you make it!

1 cup butter, softened

1 1 /4 cup sugar

2 eggs, room temperature

8 ounces Greek yogurt

2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla

1 bag mini chocolate chips

Using a paddle attachment on a stand mixer, cream butter and sugar until pale gold. Add eggs, Greek yogurt and mix well.

Add dry ingredients to butter mixture, just until incorporated. Add vanilla and mix thoroughly. Fold in chocolate chips.

Grease and flour a bundt pan, then bake at 350 degrees for one hour. Test with a toothpick and then let cool completely. Once out of the pan, dust with powdered sugar.
