SUPER EASY, HOMEMADE BAGELS

Jumping on the homemade bagels bandwagon today and am so excited to share! I absolutely love my homemade, easy, no-knead bread recipe (HERE), but after my sister-in-law shared a while back that she makes her own bagels for her littles, I couldn’t wait to try myself! My kids love bagels, but even the organic, store-bought are filled with junk, so any chance to make something myself, where I know exactly what is going in the recipe and whose ingredient quality I can control, I jump at the chance.

I always use organic flour and was initially discouraged to attempt to make these because all the recipes called for self-rising flour, but it was impossible for me to find organic version locally. A quick internet search showed that you can actually make all-purpose flour self-rising with the addition of baking powder and salt, which made it so much easier. After sifting through quite a few recipes – there are, surprisingly, TONS out there, all of which are basically the same – I ended up tweaking my own. We’ve topped them with everything from bagel seasoning to blueberries, cinnamon and sugar, strawberries – they are SO GOOD!!

1 cup all-purpose flour

½ tsp salt

2 tsp baking powder

1 cup plain Greek yogurt (I like Stonyfield Organic)

1 egg, lightly beaten

Set oven to 375 degrees.

In a large bowl, mix flour, salt, baking soda and yogurt until crumbly. Use your hands to knead together to be sure all ingredients are combined (I typically have to add an extra tablespoon of yogurt to get the bits of flour at the bottom of the bowl).

Divide dough into four, equal-sized balls, then roll each into a tube that is about six inches long. Make the dough into a ring-shape, pinch the ends to keep together and place onto a baking sheet. I like to brush the top with an egg wash and then sprinkle bagel seasoning on top (the wash helps the seasoning to stick!)

Bake for 25-27 minutes, or until the tops are golden brown.
